三种海南东方酸瓜中真菌群落多样性差异分析

摘要 该研究以海南东方的西瓜、葫芦瓜、哈密瓜为原料腌制东方酸瓜样品(XG、HLG、HMG),利用Illumina Nextseq 2000高通量测序技术对其真菌菌群多样性进行分析。结果表明,HLG样品真菌群落丰富度最高,XG样品真菌群落多样性最高。从3种东方酸瓜样品中共划分到432个真菌操作分类单元(OTUs),隶属于3门、14纲、26目、47科、68属。3种东方酸瓜样品真菌主要分布在子囊菌门(Ascomycota)中,主要细菌属包括柯达酵母属(Kodamaea)、哈萨克斯坦酵母属(Kazachstania)、毕赤酵母属(Pichia)、unclassified_f_Saccharomycetales_fam_Incertae_sedis、假丝酵母属(Candida)、Diutina、青霉属(Penicillium)、毛孢子菌属(Trichosporon)、德巴利酵母属(Debaryomyces)、unclassified_o__Saccharomycetales等。3种东方酸瓜样品的真菌菌群结构存在差异,主要体现在Kazachstania、Debaryomyces、Kodamaea、Candida等10个真菌属上,该研究结果为海南东方酸瓜的标准化和工业化生产和食品质量安全控制提供理论基础和科学支撑。 The Hainan Dongfang melon samples(XG,HLG,HMG)were pickled using watermelon,cucurbit and cantaloupe as raw materials,and the fungal community diversity was analyzed using Illumina Nextseq 2000 high-throughput sequencing technology.The results showed that the richness of fungal community in the sample HLG was the highest,and diversity of fungal community in the sample XG was the highest.A total of 432 fungal operational taxonomic units(OTUs)were classified in the three Dongfang pickled melon samples,belonging to 3 phyla,14 classes,26 orders,47 families and 68 genera.The fungi were mainly distributed in the Ascomycota in three Dongfang pickled melon samples,and the main bacterial genera included Kodamaea,Kazachstania,Pichia,unclassified_f_Saccharomycetales_fam_Incertae_sedis,Candida,Diutina,Penicillium,Trichosporon,Debaryomyces,unclassified_o__Saccharomycetales,and so on.There were differences in the fungal community structure of the three Dongfang pickled melon samples,which were mainly reflected in 10 fungal genera,such as Kazachstania,Debaryomyces,Kodamaea and Candida.The results provided theoretical basis and scientific support for standardized and industrial production and food quality and safety control of pickled melon in Dongfang,Hainan.
