摘要
随着生活水平提高,人们对食品的口味和安全的要求越来越高,调味品的质量安全状况也受到了人们的高度重视。本文概述了调味品中常规的理化参数、添加剂、污染物、禁止添加物质、农药残留和真菌毒素的各种检测方法,以及各种方法的优缺点,并对调味品的质量安全检测技术进行了展望。
With the better of living standards,people’s demands for food taste and safety are increasing,the quality and safety of seasonings are also highly valued.In this paper,the methods for determination of routine physical and chemical parameters,additives,contaminants,prohibited additives,pesticide residues and mycotoxins in condiments were reviewed,and the advantages and disadvantages of these methods were summarized,the quality and safety detection technology of condiments was prospected.
