食品微生物检测中分子诊断技术的优化

摘要 随着现代食品工业的快速发展,食品安全问题得到社会的广泛关注。食品中微生物污染是影响食品安全的主要因素之一,因此对食品中微生物的检测十分重要。近年来,随着分子生物学的发展,以聚合酶链式反应、核酸杂交、基因芯片等为代表的分子诊断技术逐渐应用于食品微生物检测领域。本文在介绍食品微生物检测中常用分子诊断技术的基础上,总结出分子诊断技术应用中存在的问题,并针对性地提出优化分子诊断技术的建议,以期为进一步提升食品微生物检测水平提供参考。 With the rapid development of modern food industry,food safety has received widespread attention from the society.Microbial contamination in food is one of the main factors threatening food safety,so the detection of microorganisms in food is very important.In recent years,with the vigorous development of molecular biology,molecular diagnostic technologies represented by polymerase chain reaction,nucleic acid hybridization and gene chip have been gradually applied in the field of food microbial detection.In this paper,on the basis of introducing the commonly used molecular diagnostic technologies in food microbial detection,the problems in the application of molecular diagnosis technology are summarized,and some suggestions to optimize the molecular diagnosis technology are put forward,in order to provide reference for further improving the level of food microbial detection.
