吡嗪酰胺与水杨酸对香椿芽采后贮藏品质的影响

摘要 为了延长香椿芽的储藏期、提高采后香椿的品质,以香椿芽为原材料,借助香椿内源性激素水杨酸以及吡嗪酰胺作为切入点,分别用100μmol/L吡嗪酰胺处理香椿芽样品20 min、50μmol/L水杨酸处理样品10 min以及100μmol/L吡嗪酰胺处理20 min后用50μmol/L水杨酸处理10 min。贮藏期间观察香椿芽在第1、3、5、7天的形貌变化,并测定可溶性固形物含量、失重率、可溶性蛋白含量、花青素含量、总黄酮含量、叶绿素含量、丙二醛及亚硝酸盐含量。结合实验现象及数据表明,水杨酸和吡嗪酰胺都具有一定的保鲜效果,采用100μmol/L吡嗪酰胺和50μmol/L水杨酸复合保鲜剂对香椿芽的保鲜效果最好,能保持较好的形貌特征,同时能有效抑制采后香椿芽贮藏期间丙二醛和亚硝酸盐含量的上升。研究可为香椿的保鲜及香椿产业的发展提供一定参考。 In order to prolong the storage period of Chinese toon bud and improve the quality of postharvest Chinese toon,we used Chinese toon bud as raw materials and the endogenous hormones salicylic acid and pyrazinamide as entry points.The toon bud samples were treated with 100μmol/L pyrazinamide for 20 min,50μmol/L salicylic acid for 10 min,and 100μmol/L pyrazinamide for 20 min followed by 50μmol/L salicylic acid for 10 min,respectively.The morphologic changes of Chinese toon bud on the 1st,3rd,5th and 7th days of storage were observed,and the contents of soluble solid,weight loss,soluble protein,anthocyanin,total flavone,chlorophyll,malondialdehyde and nitrite were determined.Combined with the experimental phenomena and data,the results showed that salicylic acid and pyrazinamide had certain fresh-keeping effects.The combination of 100μmol/L pyrazinamide and 50μmol/L salicylic acid had the best fresh-keeping effect on Chinese toon bud,which could maintain better morphological character and effectively inhibit the increase of malondialdehyde and nitrite contents during the storage of postharharvest Chinese toon bud.The study can provide some reference for the preservation of Chinese toon bud sinensis and the development of its sinensis industry.
