摘要
目的:规范我国铁皮石斛的产业化和规模化生产,了解铁皮石斛主要产区贵州、云南、浙江的人群食用消费习惯,为铁皮石斛食用安全性风险评估提供科学依据。方法:采用问卷调查的形式,对贵州、浙江、云南3省份的普通人群进行食用习惯的问卷调查,内容包括基本信息、食用和购买信息、认知性问题等3个方面。结果:共收回有效问卷1078份,3省份铁皮石斛食用过人群显著多于未食用人群,“偶尔”食用、1~5年食用历史、泡茶食用等人数较多,认为普通人群可以食用、婴幼儿不适用、增强免疫力功效等认知问题的选择占多数。不同省份之间、不同年龄、性别对食用频次和历史等信息有一定差异。结论:铁皮石斛在3个省份有一定的食用习惯,应加大对食用频次和历史、泡茶用食用方式的风险因素的研究力度,同时应当科学宣导铁皮石斛食用性的认知教育,正确对待不同省份之间食用习惯的差异。
【Objective】To standardize the industrialization and production of Dendrobium officinale in China,and understand the consumption habits of people in 3 provinces including Guizhou,Yunnan and Zhejiang to provide scientific reference for the risk assessment of food safety of Dendrobium officinale.【Method】The questionnaire survey was conducted on general population of in 3 provinces including Guizhou,Yunnan and Zhejiang of China.The content of questionnaire includes basic information,consumption and purchase information,and cognitive problems.【Result】This survey received 1078 valid questionnaires,and the results showed the population who had eaten D.officinale in 3 provinces was significantly more than that who had not eaten it,and people who answered occasionally eat D.officinale,eating history within 1—5 years,making tea has the majority number.Also,most people thought that the general population could eat,not suitable for infants and young children,enhance the efficacy of immunity and other cognitive problems.The article also concluded that there were certain differences in information such as consumption frequency and history among different provinces,ages and genders.【Conclusion】D.officinale has certain eating habits in 3 provinces.We should strengthen the research on the factors of consumption and consumption frequency of tea,and scientifically publicize the edible quality,correctly treat the differences of different provinces.
