益生菌储藏稳定性研究进展

摘要 益生菌对人体具有多种健康功效,如调节肠道菌群、提高免疫力等,被广泛应用于食品、化妆品、保健品等行业。对益生菌来说,保持足够的数量及活性以到达作用位点是其发挥益生作用的前提。因此,保证益生菌制品的储藏稳定性至关重要。益生菌制品在储藏过程中会受到多种因素(如温度、氧气、光照等)影响,导致菌株发生损伤,影响储藏的稳定性,因此,如何提高益生菌制品的储藏稳定性一直是一个难点,也是研究的热点。文章系统性总结了益生菌储藏稳定性的评价方法,探究了益生菌储藏稳定性的影响因素,最终归纳总结出了提高益生菌储藏稳定性的策略,以期为益生菌的高活性储藏提供参考。 Probiotics have a variety of health effects,such as regulating intestinal flora,improving immunity,etc...They are widely used in the food,cosmetics,and health care product industries.For probiotics,maintaining an adequate quantity and activity to reach the target site is a prerequisite for exerting their probiotic effects.Therefore,ensuring the storage stability of probiotic products is importance.During storage,probiotic products can be influenced by various factors,including temperature,oxygen,light,and more.These factors can lead to strain damage and affect the storage stability of probiotics.Consequently,improving the storage stability of probiotics has a;ways been a challenging and research hotspot.This paper systematically summarizes the evaluation methods for storage stability,explores the factors that affect storage stability,and synthesizes strategies to enhance storage stability,so as to provide reference for the high-activity storage of probiotics.
