摘要
花青素是一种天然酚类化合物,属于类黄酮科,广泛分布于花朵、叶片、水果和蔬菜中。花青素具有多种功能活性,既可作为天然着色剂,也可作为膳食抗氧化剂应用于食品工业。然而,由于花青素在加工和贮藏过程中对环境条件的稳定性较低,极大地限制了其作为活性成分应用于食品和医疗行业。纳米颗粒递送系统是一种通过构建适当的食品胶体微结构来包埋、保护和控释营养素的。以蛋白质为载体构建的花青素复合纳米颗粒的递送系统为功能食品中花青素的应用提供了一种有效的途径。主要介绍了蛋白基花青素纳米颗粒科研进展和目前制备蛋白基花青素复合纳米颗粒的方法,并详细阐述了不同蛋白质在构建花青素复合纳米颗粒中的应用,将为探索多策略构建花青素递送系统提供理论指导。
Anthocyanin,a natural phenolic compound belonging to the flavonoid family,is widely distributed in flowers,leaves,fruits and vegetables.Due to its various functional activities,anthocyanins can be used as a natural colorant and dietary antioxidant in the food industry.However,the low stability of anthocyanin to environmental conditions during processing and storage greatly limits its application as an active ingredient in food and medical industries.Nanoparticle delivery system,which constructs appropriate food colloidal microstructure to embed,protect,and control the release of nutrients,provides an effective way for the application of anthocyanin in functional foods.This review mainly introduced the research progress of protein-based anthocyanin nanoparticles and the current methods for preparing protein-based anthocyanin composite nanoparticles.We also elaborated on the application of different proteins in the construction of anthocyanin composite nanoparticles,which would provide theoretical guidance for exploring the multi-strategy construction of anthocyanin delivery system.
