摘要
明胶是一种天然生物材料,具有优良的流变性质,广泛应用于食品、医药、生物医用等领域。明胶流变学的研究对于优化明胶产品的性能具有重要意义。本文简述了明胶浓度、pH值、离子浓度等因素对明胶流变性质的影响,总结了明胶流变学在食品包装、生物医用等领域的应用,以及展望了明胶流变学在明胶应用的前景。
Gelatin,a natural biological material with excellent rheological properties,is widely used in food,medicine,biomedical and other fields.Th e study of gelatin rheology is of great significance for optimizing the performance of gelatin products.This article briefly describes the inf uence of gelatin concentration,pH value,ion concentration and other factors on the rheological properties of gelatin,summarizes the applications of gelatin rheology in food packaging,biomedicine and other fields,and prospects the application prospects of gelatin rheology in gelatin.
