刺梨果渣可溶性膳食纤维提取工艺优化及理化性质研究

摘要 通过对碱法提取开封黄河故道产刺梨果渣可溶性膳食纤维(SDF)的影响因素进行分析,以获得刺梨果渣SDF提取工艺优化参数。在单因素影响刺梨果渣SDF提取率试验基础上,选择液料比、提取温度和碱液浓度,作三因素三水平响应面试验,得到最佳提取条件为:液料比(mL∶g)为30∶1、提取温度为77℃、碱液浓度为9.7 g/L。以此条件进行刺梨果渣SDF提取验证试验,测得实际提取率平均值为16.843%,基本与预测值相合,表明优化后的参数可靠。所得刺梨果渣SDF的持水力为(13.41±0.09)g/g、持油力为(4.72±0.17)g/g、膨胀力为(11.95±0.05)mL/g。 By analyzing the influencing factors of alkaline extraction of soluble dietary fiber(SDF)from Rosa roxburghii pomace produced in the old Yellow River channel of Kaifeng,the optimization param⁃eters of Rosa roxburghii pomace SDF extraction process were obtained.On the basis of a single factor ex⁃periment affecting the extraction rate of SDF from Rosa roxburghii pomace,a three factor three-level re⁃sponse surface experiment was conducted by selecting liquid to material ratio,extraction temperature,and alkaline concentration.The optimal extraction conditions were obtained as follows:liquid to material ratio(mL∶g)of 30∶1,extraction temperature of 77℃,and alkaline concentration of 9.7 g/L.The SDF extraction validation experiment of Rosa roxburghii pomace was conducted under these conditions,and the average actual extraction rate was measured to be 16.843%,which is basically consistent with the predicted value,indicating that the optimized parameters are reliable.The water holding capacity of SDF obtained from Rosa roxburghii pomace is(13.41±0.09)g/g,oil holding capacity is(4.72±0.17)g/g,and ex⁃pansion capacity is(11.95±0.05)mL/g.
