园艺作物果实硬度测量方法研究进展

Research Progress on Measurement of Fruit Hardness in Horticulture Crops

摘要 园艺作物果实硬度是衡量果实品质和成熟度的重要指标之一,不仅影响人们对果蔬的喜好程度,还与果蔬采后贮藏与加工、鲜果货架期、裂果等紧密相连。因此,准确、快速、简单测量园艺作物的果实硬度则显得尤为重要。目前测量园艺作物果实硬度的方法主要有感官评价法、质构分析法、声特征检测法、高光谱成像技术、近红外光谱技术,本研究简要介绍了这些测量方法的原理,主要对这些测量方法的具体应用展开了论述,最后分析了各个方法的优缺点,并对果实硬度测量方法的发展提出展望,以期为园艺作物果实硬度相关科学研究提供借鉴。 Fruit hardness of horticult ural crops is one of the important indicators of fruit quality and maturity,which not only affects people to the degree of fruit and vegetable preference,but also closely related to storage and processing of fruits and vegetables after postharvest,fresh fruit shelf life,dehiscent fruit and so on.Therefore,it is particularly important to measure the fruit hardness of horticultural crops accurately,quickly and simply.At present,the methods for measuring fruit hardness of horticultural crops mainly include sensory evaluation method,textural analysis,acoustic feature detection,hyperspectral imaging,and near infrared spectrum technology.This review briefly introduces the principles of these measurement methods,mainly discusses the concrete application of these measurement methods,analyzes the advantages and disadvantages of each method,and discussed the development of fruit hardness measurement methods.Through the review,we hope to provide reference for the scientific research on the fruit hardness of horticultural crops.
