摘要
近几年,白酒行业中“酱酒热”的掀起,对特香型白酒消费市场带来了很大的冲击。从特香型的由来、定义、标准、工艺特点、风味特征等方面阐述特香型白酒,以期为特香型白酒企业及相关从业人员提供借鉴与参考。
In recent years,the"fever of sauce-flavor(Jiangxiangxing)Baijiu"set off by the Baijiu industry has inevitably brought a certain impact on the consumption ma-rket of Te xiang xing baijiu.This paper expounds the origin,definition,standard,tech-nological characteristics and flavor characteristics of Te xiang xing baijiu,in order to provide reference for Te xiang xing baijiu enterprises and related workers.
