摘要
我国的酒文化历史悠久,但蒸馏酒是自元代开始才广为流传,将其称为白酒、烧酒或者白干等,是一种酒精度较高的液体。通过查阅相关文献,了解了中国传统白酒的工艺以及白酒在中药方面的应用,并对白酒中所含的化学成分进行了总结,为白酒的养生保健以及安全性评价提供一定的参考意义。
The culture of Chinese liquor has a long history,but distilled spirits are widely circulated since the Yuan Dynasty.It is called"Baijiu","shaojiu","baigan"and so on.It is a kind of liquid with high alcohol content.Chinese liquor is used in Chinese traditional medicine and its chemical composition is summarized through the relevant literature.It provides a reference for health preservation and safety evaluation of liquor.
