摘要
实验通过在新建窖池添加窖泥养护液的方式,提高新建制酒车间基酒品质,添加后对窖泥微生物改进及基酒中己酸乙酯含量进行跟踪检测,结果表明,该方法的养护效果显著,窖池微生物环境改善明显,芽孢杆菌数量增加了2.6倍,基酒中己酸乙酯含量在破窖期、顶窖期、圆一排、圆二排、圆三排、插窖期、挑窖期分别提高了114.1%、28.9%、10.2%、35.5%、58.5%、65.8%、85.7%。该方法为新建窖池基酒品质的提升提供了技术支撑。
The pit mud quality and liquor body quality in the new pit were improved by adding pit mud curing liquid in the pit.The number of pit mud spore bacteria increased from 2.95×103 cfu/g to 1.05×105cfu/g,an increase of 2.6 times.The ethyl caproate content increased by 114.1%,28.9%,10.2%,35.5%,58.5%,65.8%and 85.7%respectively in the pit breaking period,the pit top period,the first round row,the second round row,the third round row,the pit insertion period and the pit picking period.Therefore,the pit mud curing liquid can effectively increase the number of functional microorganisms in the pit mud,promote the generation of aromatic components such as ethyl caproate in the brewing process,and supplement various microorganisms and nutrient substances in the pit mud of the pit pool to a certain extent.
