食用农产品中重金属检测的步骤和常用分析方法

摘要 在国家和省市等部门组织的食品安全监督抽检中,农产品时常会被检出重金属含量超标。易超标的重金属主要是铅、镉、铬、汞、砷等,如果长期摄入这些重金属污染物,会对人体的血液、神经和脏器等系统造成损害。本文总结了国家标准方法中食用农产品重金属检测的步骤和常用分析方法,为从事农产品质量检测的工作人员提供参考。 In the food safety supervision and sampling inspection by the state,provinces and cities and other departments,agricultural products are often found to be certain heavy metal content.The heavy metals that are easy to exceed the standard are mainly lead,cadmium,chromium,mercury,arsenic,etc.,if these heavy metal pollutants are ingested for a long time,they will cause damage to the human body’s blood,nerves and organs.This paper summarizes the steps and common analysis methods for the detection of heavy metals in edible agricultural products in the national standard method,and provides reference for the staff engaged in the quality inspection of agricultural products.
