摘要
为研究牦牛骨肽的提取率和抗氧化活性,本试验以青海牦牛骨为原料,分析了不同蛋白酶对牦牛骨肽提取率和体外抗氧化活性的影响。结果显示,不同蛋白酶对牦牛骨提取率和抗氧化活性均有一定影响。碱性蛋白酶牦牛骨肽提取率为14.67 mg/mL,DPPH自由基清除率为(73.19±2.18)%,·OH清除率为(64.35±3.25)%,还原力为0.192±0.045,均显著高于其余蛋白酶(P<0.05)。因此,碱性蛋白酶制备的牦牛骨肽具有提取率高和抗氧化活性好的优势,为牦牛骨肽功能性产品的开发提供了数据参考。
In order to study the extraction rate and antioxidant activity of yak bone peptide,the effects of different proteases on the extraction rate and antioxidant activity of yak bone peptide in vitro were analyzed.The results showed that different proteases had certain effects on the extraction rate and antioxidant activity of yak bones.The extraction rate of alkaline protease yak bone peptide was 14.67 mg/mL,and the DPPH free radical scavenging rate was(73.19±2.18)%,The clearance rate of·OH was(64.35±3.25)%,and the reducing power was 0.192±0.045,which were significantly higher than those of other proteases(P<0.05).Therefore,the preparation of yak bone peptide by alkaline protease has the advantages of high extraction rate and good antioxidant activity,which provides a data reference for the development of functional products of yak bone peptide.
