摘要
金属氧化物纳米颗粒作为常见的纳米抑菌颗粒,在农业、包装、食品等领域应用广泛,且在粮食保鲜上有巨大的应用潜力。从金属氧化物纳米颗粒的基本特性、对粮食生理活性、细胞结构、蛋白质结构等几个方面重点综述了金属氧化物纳米颗粒对粮食品质的影响,并有针对性的列举出了部分学学者的研究方向及结果,以期望相对全面的分析金属氧化物纳米颗粒对粮食品质的影响,从而促进金属氧化物纳米颗粒在粮食中的推广应用。
Metal oxide nanoparticles(MONPs),as common nano-antibacterial particle,are widely used in agriculture,packaging,food industries,and have immense potential in cereal preservation.This review focused on the impact of MONPs on grain quality,including physiological activities,cellular structures,protein structures,and highlights specific research directions and findings of some scholars,aiming to provide a comprehensive analysis of the effects of MONPs on grain quality,intending to promote the widespread application of these nanoparticles in the grain industry.
