摘要
建立高效液相色谱法测定油脂中丙二醛的不确定度的评估方法,按照国标方法GB 5009.181—2016《食品安全国家标准食品中丙二醛的测定》进行检测,并依据JJF 1059.1—2012《测量不确定度评定与表示》,对实验过程中各不确定度因素的来源进行了综合分析,建立了油脂中丙二醛含量不确定度的数学模型。结果表明:不确定度主要来源于标准物质溶液配制(占比约为82.23%),其次是标准曲线的拟合(占比约为8.61%),因此在日常实验中要定期对高效液相色谱仪进行维护保养,选用准确性高的玻璃量器进行标准溶液配制。
This experiment established an evaluation method for the uncertainty in the determination of malondialdehyde in oils using high-performance liquid chromatography according to GB 5009.181-2016“National Standard for food safety Determination of malondialdehyde in food”for testing,and according to JJF 1059.1-2012“evaluation and expression of measurement uncertainty”,comprehensive analysis was conducted on the sources of various uncertainty factors during the experimental process.Established a mathematical model for the uncertainty of malondialdehyde content in oils and fats.The results showed that the uncertainty was mainly caused by the preparation of reference materials(accounting for approximately 82.23%),and the second is the fitting of the standard curve(accounting for approximately 8.61%).Therefore,the High-performance liquid chromatography should be maintained regularly in daily work and select a glass measuring instrument with high accuracy for standard solution preparation.
