摘要
抗菌肽是自然界中广泛存在的一类多肽物质,它们构成了生物体先天免疫系统的重要组成部分。源自植物乳植杆菌的抗菌肽对细菌、真菌等均有抑制作用,并已在医药、畜牧和食品等领域得到广泛应用。本文概述了植物乳植杆菌抗菌肽的种类、合成途径和抑菌机制,以及它们在食品、饲料和医药领域的应用,旨在为相关研究与应用提供参考。
Antimicrobial peptides are a class of peptides widely found in nature,and they constitute an important part of the innate immune system of different organisms.Lactiplantibacillus plantarum antimicrobial peptide has inhibitory effect on bacteria and fungi,and have been widely used in medicine,animal husbandry,food and other fields.This paper summarized the types,synthesis pathways,and antibacterial mechanisms of L.plantarum antimicrobial peptides,as well as their applications in the fields of food,feed,and medicine,aiming to provide references for related research and applications.
