食品安全快速检测技术在食源性致病菌检测中的应用

摘要 本文针对食源性致病菌检测的迫切需求,深入分析了主要致病菌的特性,并探讨了食品安全快速检测技术的多种方法及其面临的挑战。文章重点介绍了核酸扩增、免疫分析、生物传感等技术的优势与局限,同时针对样品基质复杂性、低丰度致病菌的富集分离以及现场快速检测设备的稳定性问题,提出了具体的技术改进对策。通过优化检测技术,可显著提升食源性致病菌检测的灵敏度、特异性和操作便捷性,为食品安全监管提供强有力的技术支撑。 This article focuses on the urgent need for the detection of foodborne pathogens,analyzes in depth the characteristics of the main pathogens,and explores various methods and challenges of rapid food safety detection technology.The article focuses on the advantages and limitations of technologies such as nucleic acid amplification,immunoassay,and biosensing.At the same time,specific technical improvement measures are proposed to address the complexity of sample matrices,the enrichment and separation of low abundance pathogenic bacteria,and the stability of on-site rapid detection equipment.By optimizing detection techniques,the sensitivity,specificity,and operational convenience of detecting foodborne pathogens can be significantly improved,providing strong technical support for food safety supervision.
