摘要 在全球化的背景下,动物源性食品安全问题日益突出,对检测技术提出了更高的要求。本文从多个角度分析了当前动物源性食品安全检测技术的发展现状、面临的挑战以及未来的发展方向。不仅涵盖了分子生物学、免疫学、质谱分析和纳米技术等技术层面的进展,还考虑了法规、监管体系、供应链管理以及消费者教育等方面的影响。通过全面综合分析,为动物源性食品安全提供更系统、更全面的保障。 In the context of globalization,animal-derived food safety issues are becoming increasingly prominent,and higher requirements have been put forward for detection technology.This paper analyzes the current development status of animal-derived food safety detection technology,the challenges faced,and the future direction of development from multiple perspectives.Not only does it cover the technical advances in molecular biology,immunology,mass spectrometry and nanotechnology,but it also considers the impact of regulations,regulatory systems,supply chain management and consumer education.Through a comprehensive and integrated analysis,to provide more systematic and comprehensive safeguards for the safety of animal-derived food.
