鹿茸菇富硒工艺及营养成分分析

摘要 为探究硒处理对鹿茸菇产量和品质的影响,以亚硒酸钠、纳米硒及硒代氨基酸为硒源,将不同浓度的硒源添加到培养基中进行鹿茸菇富硒栽培,测定不同硒源及硒浓度处理下鹿茸菇的生长状况、产量、总硒含量、有机硒占比以及主要营养成分含量。结果表明:低浓度(0.5~4.0 mg/kg)硒处理,鹿茸菇生长良好且产量提高;而高浓度(8.0~64.0 mg/kg)硒处理会抑制鹿茸菇的生长,产量降低。另外,采用在培养基中添加硒代氨基酸(2.0~4.0 mg/kg)的方式,可获得硒含量和有机硒占比高的鹿茸菇。采用硒处理可提高鹿茸菇中的蛋白质含量和16种氨基酸总量,但是对脂肪、粗纤维、总糖和碳水化合物含量没有显著影响。试验结果为富硒鹿茸菇的深入研究以及大规模生产提供了理论依据和数据支撑。 To investigate the effect of selenium treatment on the yield and quality of Lyophyllum decastes,different concentrations of selenium sources,including sodium selenite,nano selenium,and selenium amino acid,were added to the culture medium for selenium-enriched cultivation of Lyophyllum decastes.The growth status,yield,total selenium content,proportion of organic selenium,and contents of main nutrient components of Lyophyllum decastes were measured under different selenium sources and concentrations.The results showed that low concentration(0.5~4.0 mg/kg) of selenium treatment promoted good growth and increased yield of Lyophyllum decastes,while high concentration(8.0~64.0 mg/kg) inhibited growth and reduced yield.Additionally,adding selenium amino acids(2.0~4.0 mg/kg) to the culture medium resulted in Lyophyllum decastes with high selenium content and a high proportion of organic selenium.Selenium treatment increased the content of protein and total amount of 16 amino acids in Lyophyllum decastes,but had no significant effect on the content of fat,crude fiber,total sugar and carbohydrates.The results provide theoretical basis and data support for the in-depth research and large-scale production of selenium-enriched Lyophyllum decastes.
