龙游县2018-2022年食品食源性致病菌监测结果分析

摘要 目的:分析龙游县市售食品中食源性致病菌污染情况,为食源性疾病的防控提供科学参考依据。方法:按照《衢州市食品安全风险监测手册》要求,2018-2022年在龙游县区域内不同地点采集不同样品进行食源性致病菌监测,并对结果进行统计分析。结果:2018-2022年采集13类共596份样品,共检出6种致病菌,检出阳性样本37份,食源性致病菌的总检出率为6.21%。其中,克罗诺杆菌属检出率最高(10.42%);各类食品中动物性淡水产品检出率最高(16.67%);不同采样地点食源性致病菌检出率情况为流动摊贩>农贸市场>商店/超市>外卖平台>餐饮店。结论:龙游县在售食品食源性致病菌污染状况总体良好,但在肉与肉制品、动物性水产品及粮食制品中存在较大风险,需要对重点食品的生产、加工、销售环节加强监督管理,减少相关食源性安全事件的发生。 Objective:To analyze the contamination of foodborne pathogens in food sold in Longyou county,and to provide scientific reference for the prevention and control of foodborne diseases.Method:According to the requirements of Food Safety Risk Monitoring Manual of Quzhou City,different samples were collected at different locations in Longyou county from 2018 to 2022 for monitoring of foodborne pathogens and the results were statistically analyzed.Result:A total of 596 samples from 13 categories were collected from 2018 to 2022,and 6 pathogens were detected,37 positive samples were detected,and the total detection rate of food-borne pathogens was 6.21%.The detection rate of Cronobacter was the highest(10.42%).The detection rate of animal fresh water products was the highest among all kinds of food(16.67%).The detection rate of foodborne pathogens in different sampling locations were mobile vendors>farmers'markets>stores/supermarkets>takeaway platforms>food and beverage outlets.Conclusion:Foodborne pathogen contamination in food sold in Longyou county is generally good,but there are greater risks in meat and meat products,animal aquatic products and food products.It is necessary to strengthen supervision and management of production,processing and sales of key food to reduce the occurrence of related foodborne safety incidents.
