摘要
采用中红外(MIR)光谱分别开展了四大著名小米(蔚县桃花小米、沁州黄小米、金乡小米、龙山小米)及红谷小米的淀粉晶体/非晶体结构研究。采用二维中红外(2D-MIR)光谱进一步开展了小米淀粉晶体/非晶体结构的热变性研究。
The crystal/amorphous structure of four famous millets(including:Yuexian peach blossom millet,Qinzhou yellow millet,Jinxiang millet and Longshan millet)starch and red valley millet starch were studied by middle infrared(MIR)spectrum.The thermal denaturation study on crystal/amorphous structure of millet starch was discovered by two-dimensional middle infrared(2D-MIR)spectrum also.
