摘要
糖蛋白是一类经由寡糖链修饰的结合蛋白质,是重要的生物大分子,广泛存在于各种生物体中,具有抗氧化、抗炎、免疫调节等多种生物学功能,在饲料添加剂和功能性食品的研制与开发等方面具有重要的意义。本文主要针对糖蛋白的提取纯化、营养与生物学活性等的研究进行综述与展望,为糖蛋白的进一步研究与新产品开发提供依据。
Glycoprotein is a kind of binding protein modified by oligosaccharide chains,which is used as an important biological macromolecule.It exists in various organisms widely and has many biological functions,such as antioxidant,anti-inflammatory,immune regulation and so on.Glycoprotein plays an important role in the fields of feed additives and functional foods.This paper reviewed the extraction,purification,nutrition,and biological activity of glycoprotein,in order to provide a basis for the research and new product development of glycoprotein in the future.
