摘要
霉菌毒素是食品尤其是农产品和谷物饲料中普遍存在的污染物,对人类和畜禽健康造成全球性的威胁,在众多脱毒方法中生物学方法脱毒是最重要方法。综述了微生物对霉菌毒素脱毒(吸附和代谢)、酶解解毒(降解)的最新研究进展,阐述了生物学方法对霉菌毒素的脱毒机制。为此,农产品中可通过添加适当的微生物或酶进行脱毒,以保障消费者的人身安全。
Mycotoxin is a common contaminant in food,especially in agricultural products and grain feed,which poses a global threat to human and livestock health.Among many detoxification methods,biological detoxification is the most important method.In this paper,the latest research progress of microbial detoxification(adsorption and metabolism)and enzymatic detoxification(degradation)of mycotoxins was reviewed,and the mechanism of biological methods for detoxification of mycotoxins was expounded.To this end,agricultural products could be detoxicated by adding appropriate microorganisms or enzymes to ensure the personal safety of consumers.
