摘要
甲醛是一种毒性较强的有机物,可破坏生物细胞蛋白,刺激机体引发过敏反应,也可造成DNA和染色体损伤,降低细胞活力并加速细胞死亡,对人体健康造成巨大潜在危害。食品在生产、加工与运输环节中一般不容易被甲醛污染,但由于甲醛可以改变食品的感官性状,并具有延长食品的保质期、增加食品的持水性和柔韧性的作用,通常被一些不法商贩人为添加到水发产品或血制品中造成甲醛残留。因此,食品中甲醛的检测愈发受到人们的关注。主要围绕食品中甲醛的快速检测方法及其原理进行阐述,可为甲醛检测有关技术人员提供更快、更有效的理论参考,也可为食品中甲醛的快速检测新技术的研发提供新思路。
Formaldehyde is a highly toxic organic substance,which can destroy biological cell proteins,stimulate the body to trigger allergic reactions,and also cause DNA and chromosome damage,reduce cell vitality and accelerate cell death,causing huge potential harm to human health.Food is generally not easy to be contaminated by formaldehyde in the production,processing and transportation links.However,because formaldehyde can change the sensory properties of food,prolong the shelf life of food,increase the water holding capacity and flexibility of food,it is usually artificially added to aquatic products or blood products by some illegal traders to cause formaldehyde residue.Therefore,the detection of formaldehyde in food has attracted more and more attention.This article mainly focused on the rapid detection methods and principles of formaldehyde in food,which could provide faster and more effective theoretical reference for the relevant technical personnel of formaldehyde detection,and could also provide new ideas for the research and development of new technologies for rapid detection of formaldehyde in food.
