顶空固相微萃取-气相色谱质谱法测定肉制品中的己醛

Determination of Hexanal in Meat Product by Headspace Solid-Phase Microextraction-Gas Chromatograph-Mass Spectrometry

摘要 目的:建立顶空固相微萃取结合气相色谱质谱联用法(Gas Chromatography-Mass Spectrometry,GC-MS)测定肉制品中挥发性风味物质己醛含量的方法。方法:样品在静态顶空60℃条件下平衡30 min达到气液平衡后,采用DVB/CAR-PDMS萃取纤维头顶空吸附30 min后进样,用DB-5ms色谱柱程序升温分离,GC-MS检测,外标法定量。结果:己醛在100~2000μg·L^(-1)线性关系良好,相关系数为0.9994;方法检出限为10.0μg·kg^(-1),定量限为30.0μg·kg^(-1),加标回收率为94.79%~98.06%。结论:方法的准确度高、选择性好,可用于肉制品中己醛的测定。 Objective:To establish a method for the determination of hexanal,a volatile flavor substance in meat products,based on headspace solid-phase microextraction-gas chromatography-mass spectrometry.Method:After the sample was balanced at 60℃for 30 min to reach gas-liquid equilibrium,it was adsorbed on a DVB/CAR-PDMS extraction fiber head for 30 min before injection.The sample was separated by programmed temperature rise on a DB-5ms column,detected by gas chromatography-mass spectrometry,and quantified by external standard method.Result:Hexanal had a good linear relationship in the range of 100~2000μg·L^(-1),with a correlation coefficient of 0.9994.The detection limit of the method was 10.0μg·kg^(-1),the quantification limit was 30.0μg·kg^(-1),and the spike recovery was 94.79%~98.06%.Conclusion:The method has high accuracy and good selectivity,and can be used for the determination of hexanal in meat products.
