摘要
食品中的微生物污染是影响食品安全的重要因素之一。聚合酶链式反应(Polymerase Chain Reaction,PCR)技术具有灵敏、快速等特点,属于一种特异检测方法,被广泛应用于食品微生物检测。本文阐述PCR技术的特点及其在食品微生物检测中的应用,探讨当前PCR技术在食品微生物检测中存在的主要问题,以期为PCR技术在食品微生物检测领域中的应用提供借鉴。
Microbial contamination in food is one of the important factors affecting food safety.The polymerase chain reaction(PCR)is a specific detection method with the characteristics of sensitivity and speed,and is widely used in the detection of food microorganisms.This paper describes the characteristics of PCR technology,the application of PCR technology in food microbial detection,and discusses the main problems existing in the current PCR technology in food microbial detection,in order to provide reference for the application of PCR technology in the field of food microbial detection.
