摘要
禽蛋是家禽的主要产品之一,蛋壳的颜色影响其销售,生产者与研究人员一直关注如何选择与调控家禽的蛋壳颜色。家禽蛋壳中的主要色素大致分为三种,即原卟啉Ⅸ、胆绿素Ⅸ和胆绿素锌螯合物。文章对蛋壳颜色的形成、影响因素和关联基因等方面进行综述,以促进家禽蛋壳颜色的研究。
Poultry eggs are one of the main products of poultry and the colour of eggshell affects their marketing.Producers and researchers have been concerned with the selection and regulation of eggshell color in poultry.The main pigments in poultry eggshell are broadly classified into three types,namely protoporphyrinⅨ,biliverdinⅨand zinc chelates of biliverdin.This paper reviewed the formation,the influencing factors and the associated genes of eggshell colour,aimed to promote further research on poultry eggshell color.
