黑果花楸保健饮料研制及抗视疲劳功能研究

摘要 以黑果花楸为原料,采用单因素试验考察黑果花楸汁、柠檬酸、白砂糖、玫瑰香精添加量对饮料品质的影响,并利用正交试验进行优化,确定黑果花楸保健饮料最佳参数为:黑果花楸汁添加量40%,柠檬酸添加量0.11%,白砂糖添加量11%,玫瑰香精添加量0.010%,此参数条件下制备得到的保健饮料呈现紫红色、有光泽,没有沉淀或者悬浮物,糖酸和滋味协调,具有黑果花楸独有的香气和风味。抗氧化活性测定结果及动物试验结果显示,该保健饮料具有较高的DPPH自由基、羟自由基清除率,具备一定抗氧化能力;可有效调节睫状体中环磷酸腺苷(cAMP)、环磷酸鸟苷(cGMP)的含量,具备一定的抗视疲劳功能。 By exploring the addition of four factors of Aronia melanocarpa juice,citric acid,sugar and rose flavor,and using orthogonal experiments to optimize,the optimal parameters of Aronia melanocarpa health drink were determined as follows:the addition amount of Aronia melanocarpa juice was 40%,the addition of citric acid was 0.11%,the addition of sugar was 11%,and the addition of rose flavor was 0.010%.Luny,no precipitation or suspended solids,sugar and acid complement each other well,with the unique aroma and flavor of Aronia melanocarpa.The results of antioxidant activity measurement and animal experiments showed that the health drink had a high DPPH free radical and hydroxyl radical scavenging rate,had a certain antioxidant capacity,and could effectively regulate the content of cAMP and cGMP in the ciliary body,and had a certain anti-visual fatigue function.
