粮油及其加工副产物中真菌毒素全产业链防控技术研究进展 被引量:1

Research Progress on Prevention and Control Technology of Mycotoxins in Grain, Oil, and ItsProcessing By-products Based on the Whole Industry Chain

摘要 真菌毒素是由真菌生长过程中产生的有毒代谢产物,如何在粮食种植、储运、加工及利用的全产业链上防控霉菌毒素污染是粮食和饲料行业面临的难题。迄今为止,虽有技术措施可以防控或部分脱除霉菌毒素,但粮食生产加工利用多个环节的综合策略将能更有效地防控污染风险。文章综述了育种防控、田间管理防控、储藏防控、加工脱毒以及脱毒剂研发等技术的研究进展,以期推动真菌毒素全产业链防控技术的研究及应用。 Mycotoxins are toxic metabolites produced by molds during growth,and how to prevent and control mycotoxin contamination throughout the whole industrial chain of grain cultivation,storage and transportation,processing and utilization is a difficult problem for the food and feed industry.So far,although there are technical measures to prevent and control or partially remove mycotoxins,an integrated strategy for multiple stages of food production,processing and utilization will better prevent and control the risk of contamination.In this paper,the current development of breeding control,field management control,storage control,processing detoxification,and development of detoxification agents was reviewed,so as to promote the research and application of mycotoxin prevention and control technologies throughout the whole industrial chain.
