摘要
鸽肉作为一类高蛋白、低脂肪、肉质鲜美的食物,具有较高的食用价值及药用价值。即食食品加工工艺制造出的食品,方便快捷、营养丰富、食用安全。概述肉鸽作为食品的营养及保健作用、即食食品的定义及特点,同时对肉鸽即食食品加工技术研究现状和趋势进行展望,以期为我国肉鸽即食食品加工产业发展提供思路。
As a kind of food with high protein,low fat and delicious meat,pigeon meat has high edible value and medicinal value.The food produced by instant food processing technology is convenient,fast,nutritious and safe to eat.Summary the nutrition and health care function of meat pigeons as food,the definition and characteristics of instant food,and look forward to the research status and trend of instant food processing technology of meat pigeons,in order to provide ideas for the development of instant food processing industry of meat pigeons in China.
