摘要
从甘肃省定西市传统发酵食品甜醅中分离乳酸菌,通过形态观察、生理生化试验,结合分子生物学手段,进行种属鉴定,以探究定西甜醅中的乳酸菌类群。结果表明,从甜醅中共分离出30株乳酸菌,分8个属,包括片球菌属(Pediococcus)、乳植杆菌属(Lactiplantibacillu)、乳酪杆菌属(Lacticaseibacillus)、魏斯氏菌属(Weissella)、粘液乳杆菌属(Limosilactobacillus)、迟缓乳杆菌属(Lentilactobacillus)、蜜蜂乳杆菌属(Apilactobacillus)、肠球菌属(Enterococcus)。由此可以看出,定西甜醅中的乳酸菌种类丰富,多样性高,蕴含大量优质乳酸菌资源有待开发。
Lactic acid bacteria are isolated from traditional fermented tianpei in Dingxi city,Gansu province,and the species are identified by morphological observation,biochemical characteristics and 16S rDNA sequence analysis,in order to explore the group of lactic acid bacteria in Dingxi tianpei.The results show that a total of 30 strains of lactic acid bacteria are isolated from Tianpei,which are belonged to 8 genera,including Pediococcus、Lactiplantibacillu、Lacticaseibacillus、Weissella、Limosilactobacillus、Lentilactobacillus、Apilactobacillus and Enterococcus.It can be seen that the lactic acid bacteria in the fermented grains of Dingxi tianpei were rich in species with high diversity,and contained a large number of high-quality lactic acid bacteria resources to be developed.
