UPLC-CAD法测定浓香型白酒中8种多元醇及分布规律研究

摘要 建立了超高效液相色谱-电雾式检测器(UPLC-CAD)法测定白酒中8种多元醇含量,以乙腈、水作为流动相,按一定比例进行梯度洗脱,用50%乙腈溶液建立标准曲线。结果表明,本方法测定丙三醇在10~100 mg/L范围内线性关系良好(R^(2)>0.999),赤藓糖醇、甜醇、阿拉伯糖醇、D-山梨醇、D-甘露糖醇、肌醇、麦芽糖醇在0.5~5 mg/L范围内线性关系良好(R^(2)>0.999),精密度试验结果相对标准偏差(RSD)<2.0%,加标回收率100%~110%之间,可用于8种多元醇的检测;应用该技术对浓香型白酒生产过程中糟醅、黄水及不同厂家白酒进行测定,在浓香型白酒发酵酒醅、黄水中检出丙三醇、赤藓糖醇、甜醇等共计8种多元醇,通过分析不同生产厂家浓香型白酒,发现多元醇含量存在明显差异。 In this study,the ultra-high performance liquid chromatography-charged aerosol detector(UPLC-CAD)method was estab-lished to determine the content of eight polyols in Baijiu.With acetonitrile and water as mobile phases,gradient elution according to a certain proportion was carried out,and a standard curve was established with 50%acetonitrile solution.The results showed that glyc-erol had a good linear relationship in the range of 10 mg/L to 100 mg/L(R^(2)>0.999),and erythritol,dulcite,arabitol,D-sorbitol,D-mannitol,inositol and maltitol had a good linear relationship in the range of 0.5 mg/L to 5 mg/L(R^(2)>0.999).The relative standard de-viation(RSD)was<2.0%,and the spiked recovery rate was between 100%and 110%.This method could be used for the detection of the eight polyols.The method was adopted in the detection of the fermented grains and pit-bottom water of Nongxiang Baijiu,and all eight polyols were detected.Nongxiang Baijiu from different distilleries were analyzed,and it was found that their content of poly-ols varied obviously.
