摘要
运用高通量测序技术,解析了黄河流域中高温大曲夏季发酵过程的微生物群落结构,以及微生物菌群结构与生产操作的相关性。初步明确了不同工艺阶段的关键微生物种类,为进一步优化操作、提升大曲质量提供了参考依据。
In this study,high-throughput sequencing technology was used to analyze the fermentation process of high-temperature Daqu in the Yellow River basin in summer.The correlation between microbial community structure and production operation was ana-lyzed,and the key microbial species at different production stages were preliminarily defined,so as to provide reference for further operation optimization and Daqu quality improvement.
