摘要
乳酸菌富集转化无机硒为有机硒的研究成为热点,不同乳酸菌对硒的耐受力和富硒量不同,乳酸菌对亚硒酸盐(Ⅳ)转化涉及多个不同蛋白质和基因表达量变化。乳酸菌积聚硒并将其掺入合成硒代氨基酸中,可生成硒代半胱氨酸(SeCys)和甲基硒代半胱氨酸(CH3SeCys)。文章主要介绍乳酸菌富硒能力,微生物转化硒代谢机制及相关硒代氨基酸、蛋白和基因,简述富硒乳酸菌在酸奶、奶酪、发酵饮料及羊奶片等乳制品生产中的应用。
In recent years,the enrichment and conversion of inorganic selenium into organic selenium by Lactobacillus has become a hot topic.Lactobacillus have different selenium tolerance and selenium abundance,and the transformation of selenite(Ⅳ)by Lactobacillus involves changes in the expression levels of several different proteins and genes.Lactobacillus accumulate selenium and incorporate it into synthetic selenium-containing amino acids,generating selenium cysteine(SeCys)and methylselenocysteine(CH3SeCys).In this paper,the selenium enrichment capacity of Lactobacillus,the metabolic mechanism of selenium conversion by Lactobacillus,the related seleno-amino acids,proteins and genes were involved,and the application of Lactobacillus in the production of yogurt,cheese,fermented beverage,goat milk chips and other dairy products were also reviewed.
