摘要
植物乳植杆菌因具有多种益生功能,在食品、药品、动物饲料及医疗保健等领域有着广泛应用。在产业化和实际应用过程中,植物乳植杆菌生产效率和稳定性是制约其发展的关键因素。高密度培养技术可实现在有限空间和时间内显著提高菌体密度,菌粉制备技术是确保菌粉活性和稳定性的重要环节,二者在持续研究与改进中备受关注。文章综述了植物乳植杆菌高密度培养技术、分离干燥技术、微囊化技术的研究进展,为制备具有高活菌数、高稳定性的植物乳植杆菌商业化菌粉提供理论支持和实践指导。
Lactiplantibacillus plantarun has a wide range of applications in food,pharmaceuticals,animal feed and healthcare due to its various probiotic functions.In the process of industrialization and practical application,the production efficiency and stability of Lactiplantibacillus plantarun are the key factors restricting its development.High-density culture technology can significantly increase the density of bacteria in limited space and time by optimizing the culture conditions,and the powder preparation technology,as an important link to ensure the activity and stability of the powder,has attracted much attention in the continuous research and improvement.In this paper,the research progress of Lactiplantibacillus plantarun high-density culture technology,separation and drying technology,and microencapsulation technology were reviewed,aiming to provide theoretical support and practical guidance for the preparation of Lactiplantibacillus plantarun commercialized bacterial powders with high viable bacterial counts and high stability.
