阐述了葡萄渣的综合利用,通过瞬时控制压降、真菌处理和加压液体萃取等技术,对葡萄渣中膳食纤维、酚类物质、蛋白质和脂质等物质进行增值。总结了葡萄渣在食品、药物、化妆品、能源、材料和饲料等多个领域的应用,以期提升葡萄酒产业的附加值和为环保及资源节约提供有效途径。
This paper elucidates the comprehensive utilization of grape pomace by introducing technologies such as instant controlled pressure drop(DIC),fungal treatment,and pressurized liquid extraction(PLE)to increase the value of dietary fiber,phenolic substances,proteins,and lipids in grape pomace;summarizes the applications of grape pomace in various fields such as food,medicine,cosmetics,energy,materials,and feed.Aiming to enhance the added value of the wine industry and provide effective ways for environmental protection and resource conservation.
