摘要
美藤果是一种新资源食品原料,近些年以其较好的营养价值、功能特性及生物活性在食品、医药和化妆品领域备受瞩目。美藤果粕作为美藤果油加工的主要副产物,富含丰富的蛋白质,且涵盖人体所需的必需氨基酸,是一种优质的蛋白质资源,具有巨大的发展前景。文章系统地总结了美藤果粕蛋白质及活性肽的制备方法,重点阐述了蛋白质的功能特性和活性肽在抗肝癌、降血糖、降尿酸、抗氧化以及免疫调节等方面的生理活性,并对近几年美藤果粕蛋白质及活性肽的实际应用进行介绍,旨在为美藤果粕的进一步利用提供指导。
Plukenetia volubilis Linneo is a new resource food ingredient that has attracted much attention in food and cosmetics industry in recent years due to its nutritional value and functional characteristics.As the main by-products of Plukenetia volubilis Linneo oil processing,Plukenetia volubilis Linneo meal is rich in protein and covers all essential amino acids required by the human body.It is a highquality protein resource with great development prospects.This review systematically summarizes the preparation methods of protein and active peptides from Plukenetia volubilis Linneo meal,focusing on the functional characteristics of proteins and the physiological activities of active peptides in anti-liver cancer,hypoglycemia,uric acid lowering,antioxidant,and immune regulation.It also introduces the practical applications of Plukenetia volubilis Linneo meal protein and active peptides in recent years,aiming to provide some reference for the research of Plukenetia volubilis Linneo meal and accelerate the reuse of Plukenetia volubilis Linneo meal.
