花色苷-壳聚糖微粒对明胶膜结构和性能的影响

Effect of Chitosan Particles Loaded with Anthocyanin on the Structure and Properties of Gelatin Films

摘要 采用天然生物质制备多功能薄膜是现代包装研究的热点,其目的是制造可持续和可生物降解的包装。利用离子交联法制备花色苷-壳聚糖微粒并加入明胶成膜液制备复合明胶膜,探究其对明胶膜结构和功能特性的改变。首先通过扫描电子显微镜、傅里叶变换红外光谱和X射线衍射对复合明胶膜的结构特征进行表征,发现复合膜光滑完整,形成了相对紧凑的网络结构;然后研究了复合明胶膜的水合性能、力学性能、阻隔性能、光学性能、热稳定性和抗氧化性。结果表明,与空白明胶膜相比,复合明胶膜的溶胀率提高、可见-紫外光阻挡能力增强、抗拉强度由79.10 MPa上升至147.01 MPa、热稳定性提高及1,1-二苯基-2-三硝基苯肼(1,1-Diphenyl-2-picrylhydrazyl,DPPH)自由基清除率由14.41%上升至68.12%;而复合明胶膜的溶蚀率、不透明度和水蒸气透过率却有所降低,尤其是水蒸气透过率从5.98×10^(–6)g/(mm·h·kPa)下降至3.31×10^(–6)g/(mm·h·kPa)。综上所述,花色苷-壳聚糖微粒的加入能够提高明胶膜的各项性能。该研究为复合明胶膜的设计提供了数据参考。 The preparation of multifunctional films from natural biomass is a hot topic in modern packaging research.Its purpose is to produce sustainable and biodegradable packaging.Chitosan particles loaded with anthocyanin were prepared by ion cross-linking method and gelatin film-forming solution was added to prepare composite gelatin film,and the changes of structure and functional properties of gelatin film were investigated.Firstly,the structural characteristics of the composite gelatin film were characterized by scanning electron microscopy,Fourier transform infrared spectroscopy and X-ray diffraction.It was found that the composite film was smooth and complete,forming a relatively compact network structure.Then,the hydration properties,barrier properties,mechanical properties,optical properties,thermal stability,and antioxidant properties of the composite gelatin film were studied.The results showed that compared with the blank gelatin film,the swelling rate of the composite gelatin film was increased,the visibleultraviolet blocking ability was enhanced,the tensile strength was increased from 79.10 MPa to 147.01MPa,the thermal stability was improved,and the 1,1-diphenyl-2-picrylhydrazyl(DPPH)radical scavenging capacity was increased from 14.41%to 68.12%.However,the dissolution rate,opacity and water vapor permeability of the composite gelatin film decreased,especially the water vapor permeability decreased from 5.98×10^(–6)g/(mm·h·kPa)to 3.31×10^(–6)g/(mm·h·kPa).In conclusion,the addition of chitosan particles loaded with anthocyanin can improve the comprehensive performance of the gelatin film.This study provides data reference for the development of gelatin film containing anthocyanin particles.
