等离子体活化液处理对微波干燥猴头菇品质及其抗氧化活性的影响

Effect of plasma activated solution treatment on quality and antioxidant activity of microwave dried Hericium erinaceus

以猴头菇为研究对象,研究等离子体活化溶液(PAS)处理对猴头菇干燥后品质和抗氧化活性的影响。结果表明:PAS处理显著降低了细菌、酵母和霉菌的数量(P<0.05),增强了猴头菇中抗氧化酶的活性。通过对干燥猴头菇生理指标研究发现,PAS处理对猴头菇粗蛋白质含量无显著影响(P>0.05),但PAS处理10 min会显著降低总黄酮和总多糖含量(P<0.05);PAS处理1、5、10 min,总酚含量与未处理组比显著提高。抗氧化活性分析结果表明,PAS处理增加了猴头菇对DPPH、ABTS自由基的清除能力。

Taking Hericium erinaceus as the research object,the effects of plasma activated solution(PAS)treatment on the quality and antioxidant activity of dried Hericium erinaceus were studied.The results showed that PAS treatment could significantly reduce the total number of bacterial,yeast and mould(P<0.05),and enhanced the activity of antioxidant enzymes in Hericium erinaceus.The study of physiological indicators of dried Hericium erinaceus showed that PAS treatment had no significant effect on crude protein content of Hericium erinaceus(P>0.05),but PAS treatment for 10 min would significantly reduced the contents of total flavonoids and total polysaccharides(P<0.05).After PAS treatment for 1,5 and 10 min,the total phenols content increased significantly,compared to the untreated group.The results of antioxidant activity analysis showed that PAS treatment increased the scavenging capability on DPPH and ABTS free radicals of Hericium erinaceus.
