一种酿酒用打闷浆水及其配套设备的设计与实现

摘要 白酒酿造过程中蒸粮是重要的工艺关键控制点之一。蒸粮的好坏直接影响后续的微生物发酵,而蒸粮过程中打闷浆水又是一个重要环节。传统工艺采用人工泼打闷浆水,其无法做到准确把握用水量,而且人工泼洒不均匀,存在安全隐患,并增加了酿酒操作中的劳动量。针对上述问题,本文分析与探讨了一种酿酒用打闷浆水及其配套设备设计方案的实现。该设备主要由包括打闷浆水装置、加热装置和数控装置,加热装置与打闷浆水装置通过水管相互连通,加热装置与打闷浆水装置之间的水管上固定安装有水泵,数控装置分别与打闷浆水装置和加热装置电连接。对比分析表明,该装置结构简单、操作方便、安全性能高,可以有效提高蒸粮效率,节约蒸汽和节省劳动力,实用性较强。 Grain steaming is one of the key control points in Baijiu brewing.The quality of steamed grain directly affects the subsequent microbial fermentation,and adding slurry water during the steaming process is an important step.The traditional process uses manual pouring of slurry water,which cannot accurately grasp the amount of water used,and the manual pouring is uneven,which poses safety hazards and increases the workload in brewing operations.In response to the above issues,this article analyzes and explores the implementation of a design scheme for a type of brewing slurry water and its supporting equipment.The equipment mainly consists of a sealing slurry water device,a heating device,and a CNC device.The heating device is connected to the sealing slurry water device through a water pipe,and a water pump is fixedly installed on the water pipe between the heating device and the sealing slurry water device.The CNC device is electrically connected to the sealing slurry water device and the heating device,respectively.Comparative analysis shows that the device has a simple structure,convenient operation,and high safety performance,which can effectively improve the efficiency of grain steaming,save steam and labor,and has strong practicality.
