摘要
选择三种不同产地的生姜作为研究对象,测定生姜的燃烧热、燃烧稳定性、脂肪、粗纤维、灰分、微量元素、氨基酸含量,通过多指标评价生姜品质。结果表明,3种产地生姜的燃烧热在10 014.83~22 424.44 J/g之间,燃烧热大小顺序为河北石家庄>山东临沂>云南红河河口县,燃烧稳定性排序为山东临沂>云南红河河口县>河北石家庄;3种生姜的粗纤维质量分数在11.50%~13.47%之间,大小顺序为:云南红河河口县>河北石家庄>山东临沂;脂肪质量分数在1.58%~2.41%之间,大小顺序为河北石家庄>山东临沂>云南红河河口县;灰分质量分数在8.12%~10.75%之间,大小顺序为河北石家庄>云南红河河口县>山东临沂。燃烧热、燃烧性(生姜的燃烧稳定性)、脂肪含量、灰分、粗纤维、微量元素含量、氨基酸含量多指标的顺序为云南红河河口县>河北石家庄>山东临沂。本研究建立3种生姜的多指标分析及评价体系,为大规模开发生姜资源以及生姜分类研究提供有力地科学依据。
Three different origins of ginger were selected as the research objects,and the heat of combustion,combustion stability,fat,crude fibre,ash,trace elements and amino acid contents of ginger were determined to evaluate the quality of ginger by multiple indicators.The results showed that the heat of combustion of ginger from three origins ranged from 10014.83 to 22424.44 J/g,and the order of the heat of combustion was as follows:Shijiazhuang,Hebei>Linyi,Shandong>Hekou County,Honghe River,Yunnan,and the order of combustion stability was as follows:Linyi,Shandong>Hekou County,Honghe River,Yunnan>Shijiazhuang,Hebei;the crude fibre content(%)of three types of ginger ranged from 11.50%to 13.47%in the following order:Honghekou County,Yunnan>Shijiazhuang,Hebei>Linyi,Shandong;the fat content(%)ranged from 1.58 to 2.41%in the following order:Shijiazhuang,Hebei>Linyi,Shandong>Hekou County,Honghe,Yunnan;the ash content(%)ranged from 8.12 to 10.75%in the following order:Shijiazhuang,Hebei>Hekou County,Yunnan>Linyi,Shandong.The order of multiple indicators of heat of combustion,combustibility(combustion stability of ginger),fat content,ash,crude fiber,trace element content,and amino acid content was:Hekou County,Honghe River,Yunnan>Shijiazhuang,Hebei>Linyi,Shandong.This study establishes a multi-index analysis and evaluation system for three types of ginger,providing strong scientific basis for large-scale development of ginger resources and ginger classification research.
