从沙门氏菌控制看丹麦食品安全监管

摘要 2024年3月至5月,丹麦发生了一起59人因食用进口碎肉而感染沙门氏菌的食品安全事件。本文围绕这一事件,详细阐述了丹麦食品安全主管部门为应对该事件而采取的处置措施。丹麦对沙门氏菌的控制措施主要来自于对养殖场源头的沙门氏菌基底监测和风险评估,这也是丹麦制定本国沙门氏菌控制技术规范的基础,而迅速且准确的疫情反应机制则是有效控制疫情传播并清除疫情的重要手段。 From March to May 2024,there was a food safety incident in Denmark in which 59 people were infected with salmonella due to the consumption of imported minced meat.This article details the measures taken by the Danish food safety authorities in response to the incident.Salmonella control measures in Denmark are mainly derived from salmonella basal monitoring and risk assessment at the source of farms,which is also the basis for Denmark to develop its own technical specifications for salmonella control,and rapid and accurate outbreak response mecha-nisms are important means to effectively control the spread of the outbreak and clear the outbreak.
