摘要
本文探讨了肉类加工中的生物性危害、化学性危害、物理性危害及对应的高效检测技术。为了应对这些食品安全风险,现代肉类加工行业引入了DNA条形码技术、微生物学检验、高效液相色谱法、重金属检测仪、金属探测器及X射线检测等高效检测技术,以期通过高效检测技术,促使肉类加工企业提高食品安全和产品质量,减少潜在的食品安全隐患。
This article explores the biological,chemical,and physical hazards in meat processing and their corresponding efficient detection techniques.In order to address these food safety risks,the modern meat processing industry has introduced efficient detection technologies such as DNA barcode technology,microbiological testing,high-performance liquid chromatography,heavy metal detectors,metal detectors,and X-ray detection,in order to promote meat processing enterprises to improve food safety and product quality,and reduce potential food safety hazards through efficient detection technologies.
