摘要
食品安全的保障需从食品产业链的源头到终端全程管控,而田间作为产业链源头,食品安全必须严格把关。HACCP体系是国际公认的能有效提高食品安全管理水平的管理体系,基于HACCP体系原理将HACCP体系应用于蔬菜种植企业,为蔬菜种植企业建立食品安全管理体系。通过危害分析确定产地环境、农资引入、田间管理、采前检测、采后处理、员工操作6个食品安全关键环节,并且制定关键环节操作规范、监控措施、纠偏措施、审核/验证措施。HACCP体系的实施能提高企业的食品安全管理效率,降低食品安全问题发生的风险。
The application research of HACCP system in vegetable planting enterprises requires full control of food safety from the source to the end of the food industry chain,and as the source of the industry chain,food safety must be strictly controlled in the field.The HACCP system is an internationally recognized management system that can effectively improve the level of food safety management.Based on the principles of the HACCP system,the HACCP system to vegetable planting enterprises is applied,and a food safety management system for them is established.Through hazard analysis,six key food safety links,including production environment,introduction of agricultural materials,field management,pre harvest testing,post harvest treatment,and employee operation,have been identified,and operational specifications for key links have been developed monitoring measures,corrective measures and audit/verification measures.The implementation of the HACCP system can improve the efficiency of food safety management in enterprises,and reduce the risk of food safety issues.
