摘要
本文对沙县小吃标准化现状和标准化需求进行了分析,在此基础上构建了沙县小吃全产业链标准体系,包含通用基础、食材原料、预制食品生产加工、餐饮烹饪、设施设备器具、经营管理服务和检测评价改进7个标准子体系。以期发挥标准化的支撑引领作用,促进沙县小吃产业化、规范化、连锁化、品牌化、国际化、数字化、绿色化高质量发展。
This article analyzes the current situation and demand for standardization of snacks in Shaxian County.Based on this,a standard system for the entire industry chain of snacks in Shaxian County is constructed,which includes seven standard subsystems:general foundation,food ingredients and raw materials,prefabricated food production and processing,catering and cooking,facilities and equipment,business management services,and testing and evaluation improvement.In order to leverage the supporting and leading role of standardization,promote the high-quality development of Shaxian snack industry,standardization,chain,branding,internationalization,digitization,and greening.
