摘要
通过气相色谱-质谱联用法(GC-MS)对法国橡木、美国橡木、蒙古栎中的木质素进行香气成分分析,检测出酚类、酚醛类、酯类及其它类共4类组分53种香气成分。其中,美国橡木木质素香气含量最高(8270.90μg·kg^(-1)),蒙古栎木质素次之(8224.70μg·kg^(-1)),法国橡木木质素最低(6608.70μg·kg^(-1))。香韵特征分析和热图分析结果显示,3种橡木木质素的香气成分存在显著区别,美国橡木木质素能提供更多的挥发性酚类物质,带有明显的木香、甜香味道。法国橡木木质素则是具有更多的丁香酸、4-甲基愈创木酚和糠醛,提供相对柔和的木香、甜香味道。蒙古栎木质素有最多的酚醛类物质能带来浓郁的花香、果香味道,但在木香、甜香味道上有所不足。
The lignin in French oak,American oak and Mongolian oak were analyzed by gas chromatography-mass spectrometry(GC-MS).A total of 53 aroma components were detected,including 4 types of phenolic,phenolic,ester and other components.American oak lignin had the highest volatile components(8270.90μg·kg^(-1)),Mongolian oak lignin followed(8224.70μg·kg^(-1)),and French oak lignin had the least(6608.70μg·kg^(-1)).The results of aroma characteristic analysis and heat map analysis showed that the aroma components of the three kinds of oak lignin were significantly different,and American oak lignin could provide more volatile phenols,with obvious woody and sweet flavor;French oak lignin carried more syringic acid,4-methylguaiacol and furfural,providing a relatively soft woody,sweet flavor;Mongolian oak lignin had the most phenolic substances to bring a strong floral,fruity flavor but in the woody,sweet flavor was insufficient.
