摘要
探究光皮木瓜[Chaenomeles sinensis(Thouin)Koehne]与皱皮木瓜[Chaenomeles sinensis speciosa(Sweet)Nakai]果实中营养成分的差异,对光皮木瓜果皮、果肉以及皱皮木瓜果实样品的总糖、可溶性糖、淀粉、粗蛋白、粗脂肪、可滴定酸、总黄酮和单宁等含量进行了测定。结果表明,光皮木瓜与皱皮木瓜果实中的总糖、可溶糖、淀粉、粗蛋白、粗脂肪、可滴定酸和总黄酮含量差异显著,单宁含量差异不显著。光皮木瓜果肉和果皮中的总糖含量分别为279.45、283.51 mg/g,可溶糖含量分别为85.29、74.66 mg/g,显著低于皱皮木瓜中总糖和可溶糖的含量。光皮木瓜果肉和果皮中的粗蛋白含量分别为121.26、136.88 mg/g,粗脂肪含量分别为10.62、58.36 mg/g,总黄酮含量分别为4.43、5.82 mg/g,显著低于皱皮木瓜中相应成分的含量。分析光皮木瓜和皱皮木瓜果实中主要营养成分,对光皮木瓜的进一步综合开发利用具有重要意义。
The differences in nutritional components between the fruits of Chaenomeles sinensis and Chaenomeles speciosa were investigated.The total sugar,soluble sugar,starch,crude protein,crude fat,titratable acid,plant flavonoids and tannin of the pericarp and sarcocarp of Ch.sinensis and the fruit samples of Ch.speciosa were determined.The results showed that the contents of total sugar,soluble sugar,starch,crude protein,crude fat,titratable acid and total flavonoids in the fruits of Ch.sinensis and Ch.speciosa were significantly different,but the contents of tannin were not significantly different.The total sugar content in the pericarp and sarcocarp of Ch.sinensis was 279.45 and 283.51 mg/g,and the soluble sugar content was 85.29 and 74.66 mg/g,respectively,which was significantly lower than that in Ch.speciosa.The contents of crude protein in the pericarp and sarcocarp of Ch.sinensis were 121.26 and 136.88 mg/g,the contents of crude fat were 10.62 and 58.36 mg/g,and the contents of total flavonoids were 4.43 and 5.82 mg/g,respectively,which were significantly lower than the content of corresponding components in Ch.speciosa.The determination and analysis of the main nutritional components in the fruits of Ch.sinensis and Ch.speciosa is of great significance for the further comprehensive development and utilization of Ch.sinensis.
