裸藻营养成分分析与评价

摘要 为深度开发裸藻及其应用范围,采用食品安全国家标准食品理化检验方法,对裸藻营养成分进行分析与评价。结果表明,裸藻中蛋白质、脂肪、碳水化合物、膳食纤维和灰分的含量分别为21.6%、1.0%、74.2%、67.1%和1.6%;检测的20种氨基酸中,9种必需氨基酸占总氨基酸的31.67%,EAAI值为71.69;检测出20种脂肪酸,多不饱和脂肪酸占总脂肪酸的38.6%;检测的18种矿物质元素中,磷元素含量最高(488.00 mg/100 g),其后依次为钾和钙;微量元素中锌元素含量最高(7.85 mg/100 g);汞、铅、砷和镉等重金属均符合限量标准。裸藻富含多种人体所需的营养物质,具有较高的食用和应用价值。 For the in-depth development of Euglena gracilis Z.and its application scope,by using the national food safety standard food physical and chemical inspection method,the nutritional components of E.gracilis is analyzed and evaluated.The results showed that the contents of protein,fat,carbohydrate,dietary fiber and ash in E.gracilis were 21.6%,1.0%,74.2%,67.1%and 1.6%,respectively.Among the 20 amino acids examined,nine essential amino acids accounted for 31.67%of the total amino acids,the EAAI value was 71.69.20 kinds of fatty acids were detected,polyunsaturated fatty acids accounted for 38.6%of the total fatty acids.Among the 18 mineral elements measured,the phosphorus content was highest(488.00 mg/100 g),followed by potassium and calcium,the content of zinc was the highest(7.85 mg/100 g)in trace elements.Heavy metals such as mercury,lead,arsenic and cadmium met the limit standards.E.gracilis is rich in a variety of nutrients needed by the human body,and has high edible and application value.
